Meat Merchandising

This program provides classroom instruction and laboratory experience in the basic knowledge of grading, inspection, refrigeration, merchandising, slaughtering and meat cutting techniques. The use of computerized meat scales is taught, along with marketing operations such as inventory control, meat buying and record keeping.
